Easy recipe for New Mexico state cookie

Are you a true New Mexican? Put yourself to the test by making the New Mexico state cookie, the bizcochito. Bizcochitos are cookies with origins in the Spanish colony of Santa Fe de Nuevo México flavored with anise and cinnamon. Traditionally, the cookies are cut into the shape of crescent moons and stars. They can be seen made for holidays and events such as weddings, and it is often served alongside a cup of hot chocolate. Developed centuries ago, the bizcochito was brought to New Mexico by Spanish colonists and by immigrants from other Hispanic countries. It was also greatly influenced by local and Indigenous customs.

Due to an increase in local cases of COVID-19, most students were required to move out of all the University of New Mexico dorms, leaving many without easy access to the dining hall or other easy meals on campus. With plenty of time stuck in the house, here are some affordable, and easily made meals that a Lobo can cook at home.

With 2020 rolling in a new year and decade, University of New Mexico students may begin to scramble around for their next meal. UNM offers three different meal plans: the lobo, the silver and the red, as well as an array of different plans for dining dollars and various places around campus to eat. Besides La Posada, UNM’s campus offers places like Einstein’s Bagel Bros, the Student Resource Center, Mandalay at Freshbox and the Union Club on the first floor of the Student Union Building — each of which are meal swipe friendly locations where a rushing college student can grab something to go between classes.

High ABQ crime rate affects businesses on Central

The University of New Mexico's main campus, located directly north of Central Avenue, experiences an extremely high crime rate – five times the national average, according to a 2018 crime index. This high level of crime impacts the community around Central Avenue and the University, including businesses along Central. Local business owner Gina Yates of Harvard Drive's Frock Star Vintage said businesses on Central have a designated phone number to call in case there is a security emergency. Yates said she mostly deals with petty theft, with the majority of stolen items coming from the racks that she has outside of her shop.

Supreme Court Justice Sotomayor promotes children's book at KiMo

Supreme Court Justice and author Sonia Sotomayor visited the KiMo Theater in downtown Albuquerque on Sunday, Sept. 8 at 5 p.m. to talk about her new children’s book, "Just Ask." Sotomayor was appointed to the bench of the Supreme Court by President Barack Obama in 2009. She is the first Latina Supreme Court justice. Sotomayor earned her bachelor of arts from Princeton University and also earned a Juris Doctor from Yale Law School. When asked about how and what she does as Supreme Court justice, she answered, "Every decision judges make hurts someone... most of my work is spent sitting at my desk reading... (and I) deal with the biggest legal questions in the world."
